In the Vineyards: Our grapes came from Stellenbosch. All the vineyards were trellised. All grapes are harvested by hand in individual bins in optimal conditions to ensure true quality from beginning to end.
In the Cellar: The grapes were naturally fermented using wild yeast found on the grapes an in the atmosphere. The wine spent a total of 18% new oak in French oak barrels. All the barrels were 225 L and 300 L. There was a total of 7% new oak used and the remainder comprised of 2nd, 3rd and 4th fill barrels.
Analysis: Alcohol: 13.5% Residual Sugar: 2.2 g/l Total Acidity: 5.3g/l pH: 3.31
Ageing Potential: The wine is drinking superbly at the moment but can still mature for another 3-5 years.
Serving suggestions: The wine complements dishes like roast beef, lamb chops, stews, and steak.
Note: “The Fox” is named after our great grandfather, Gideon Johannes Joubert. His foresight and dedication in the wine industry made it possible for us to produce and present this elegant wine to the world. His nickname was given to him by the fox stamp that was used to mark his fruit when it was delivered to the co-ops.
